Ingredients

  • 2 c. onion, finely chopped
  • 1 clove garlic, minced
  • 3 c. cabbage, finely shredded
  • 2 c. carrots, finely diced
  • 1 c. green beans, cut
  • 2 potatoes, cubed
  • 2 c. zucchini, chopped
  • 4 oz. mushrooms, sliced
  • 2 c. tomatoes, stewed
  • 3 Tbsp. parsley, minced
  • 1 Tbsp. basil
  • 1/2 tsp. rosemary
  • 2 c. tomato juice
  • 4 c. beef bouillon
  • 1 c. kidney beans, cooked
  • 3/4 c. whole wheat macaroni
  • 1/3 c. raw barley

Instructions

  1. Saute onion until transparent.
  2. Combine garlic, cabbage, carrots, green beans, potatoes, zucchini, mushrooms, and stewed tomatoes in a pot.
  3. Add the sauteed onion and cook for 10 minutes.
  4. Stir in parsley, basil, rosemary, tomato juice, and beef bouillon.
  5. Puree 1/2 cup of kidney beans in a blender and add to the soup, then add the remaining kidney beans.
  6. Bring the mixture to a boil.
  7. Reduce heat and simmer for 25 minutes.
  8. Add whole wheat macaroni and raw barley.
  9. Cook for an additional 15 minutes until pasta and barley are tender.
