Marvelous Minestrone
A hearty, vegetable-packed minestrone soup featuring fresh herbs, tender beans, and pasta, perfect for comforting meals and suitable for vegetarians or meat-eaters alike.
Ingredients
- 2 c. onion, finely chopped ⓘ
- 1 clove garlic, minced ⓘ
- 3 c. cabbage, finely shredded ⓘ
- 2 c. carrots, finely diced ⓘ
- 1 c. green beans, cut
- 2 potatoes, cubed ⓘ
- 2 c. zucchini, chopped ⓘ
- 4 oz. mushrooms, sliced ⓘ
- 2 c. tomatoes, stewed ⓘ
- 3 Tbsp. parsley, minced ⓘ
- 1 Tbsp. basil ⓘ
- 1/2 tsp. rosemary ⓘ
- 2 c. tomato juice ⓘ
- 4 c. beef bouillon ⓘ
- 1 c. kidney beans, cooked ⓘ
- 3/4 c. whole wheat macaroni ⓘ
- 1/3 c. raw barley ⓘ
Instructions
- Saute onion until transparent.
- Combine garlic, cabbage, carrots, green beans, potatoes, zucchini, mushrooms, and stewed tomatoes in a pot.
- Add the sauteed onion and cook for 10 minutes.
- Stir in parsley, basil, rosemary, tomato juice, and beef bouillon.
- Puree 1/2 cup of kidney beans in a blender and add to the soup, then add the remaining kidney beans.
- Bring the mixture to a boil.
- Reduce heat and simmer for 25 minutes.
- Add whole wheat macaroni and raw barley.
- Cook for an additional 15 minutes until pasta and barley are tender.
