Ingredients

  • 1 cup sliced dates
  • 1 cup seedless raisins
  • 2/3 cup butter
  • 1 1/4 cups packed brown sugar
  • 1/4 cup dark molasses
  • 1 1/2 cups hot water
  • 2 eggs
  • 1 package (16 oz.) fruit cake fruit mix
  • 1 cup chopped nuts
  • 3 cups all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt

Instructions

  1. Combine dates, raisins, butter, brown sugar, molasses, and hot water in a saucepan and boil gently for 3 minutes.
  2. Cool the mixture in a large mixing bowl.
  3. Beat in the eggs.
  4. Add the fruit cake fruit mix and chopped nuts.
  5. Sift together the flour, cinnamon, nutmeg, soda, baking powder, and salt, then gradually add to the fruit mixture, beating well after each addition.
  6. Pour the batter into a 9-inch tube pan lined with wax paper, or divide among 4 small loaf pans.
  7. Bake in a very slow oven (275°F) for 2.5 hours, or 1 hour and 45 minutes if using loaf pans.
  8. Remove the cake from the oven and let cool slightly.
  9. Remove from the pan and cool thoroughly.
  10. Wrap securely in aluminum foil or waxed paper.
  11. Store in a clean, airtight container in a cool place.
  12. Age for 3 to 4 weeks to improve flavor.
