Miracle Fruit Cake
A rich, moist fruitcake packed with dates, raisins, nuts, and warm spices, ideal for holiday celebrations or special occasions, aging to develop deep, complex flavors.
Ingredients
- 1 cup sliced dates ⓘ
- 1 cup seedless raisins ⓘ
- 2/3 cup butter ⓘ
- 1 1/4 cups packed brown sugar ⓘ
- 1/4 cup dark molasses ⓘ
- 1 1/2 cups hot water ⓘ
- 2 eggs ⓘ
- 1 package (16 oz.) fruit cake fruit mix ⓘ
- 1 cup chopped nuts ⓘ
- 3 cups all-purpose flour ⓘ
- 1/2 teaspoon cinnamon ⓘ
- 1/2 teaspoon nutmeg ⓘ
- 1 teaspoon baking soda
- 1 teaspoon baking powder ⓘ
- 1 teaspoon salt ⓘ
Instructions
- Combine dates, raisins, butter, brown sugar, molasses, and hot water in a saucepan and boil gently for 3 minutes.
- Cool the mixture in a large mixing bowl.
- Beat in the eggs.
- Add the fruit cake fruit mix and chopped nuts.
- Sift together the flour, cinnamon, nutmeg, soda, baking powder, and salt, then gradually add to the fruit mixture, beating well after each addition.
- Pour the batter into a 9-inch tube pan lined with wax paper, or divide among 4 small loaf pans.
- Bake in a very slow oven (275°F) for 2.5 hours, or 1 hour and 45 minutes if using loaf pans.
- Remove the cake from the oven and let cool slightly.
- Remove from the pan and cool thoroughly.
- Wrap securely in aluminum foil or waxed paper.
- Store in a clean, airtight container in a cool place.
- Age for 3 to 4 weeks to improve flavor.
