Ingredients

  • 6 oz. onions
  • 4 oz. celery
  • 5 oz. butter
  • 3 1/2 lb. cabbage
  • 1 Tbsp. parsley
  • 5 oz. flour
  • 4 1/2 qt. chicken stock
  • 3/4 lb. frankfurters
  • 1 1/2 lb. frozen peas
  • 3 oz. mushrooms
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Saute onions and celery in butter until nearly tender.
  2. Add cabbage and chopped parsley; simmer for 5 minutes.
  3. Add flour, blending well, and cook for 2 to 3 minutes.
  4. Gradually add chicken stock, mixing thoroughly.
  5. Simmer the soup for 30 minutes.
  6. Add sliced frankfurters, frozen peas, mushrooms, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 5 minutes.
