Ingredients

  • 1/4 lb. boneless lean pork
  • 4 tsp. cornstarch
  • 3 Tbsp. light soy sauce
  • 1 tsp. minced fresh ginger root
  • 2 tsp. white vinegar
  • 1/4 tsp. garlic powder
  • 2 Tbsp. vegetable oil
  • 1 onion
  • 1 carrot
  • 2 zucchini
  • 1/3 c. unsalted roasted peanuts

Instructions

  1. Slice the pork into thin, narrow strips.
  2. Combine 2 teaspoons of cornstarch, 2 teaspoons of soy sauce, ginger, and the pork; let stand for 15 minutes.
  3. Meanwhile, mix remaining 2 teaspoons of cornstarch, 1 tablespoon plus 1 teaspoon of soy sauce, vinegar, garlic powder, and 1/2 cup water; set aside.
  4. Heat 1 tablespoon of vegetable oil in a hot wok or large skillet.
  5. Add the pork and stir-fry for 2 minutes; then remove from the pan.
  6. Heat the remaining 1 tablespoon of oil in the same pan.
  7. Add the sliced onion and diagonally sliced carrot; stir-fry for 2 minutes.
  8. Add the zucchini and stir-fry for another 2 minutes.
  9. Return the pork to the pan and pour in the soy sauce mixture.
  10. Cook while stirring until the sauce boils and thickens.
  11. Stir in the roasted peanuts.
  12. Serve the stir-fry over rice.
