Ingredients

  • 1 cup raisins
  • 1 pound pork sausage
  • 1 1/2 cups brown sugar
  • 1 1/2 cups sugar
  • 2 eggs
  • 3 cups flour
  • 1 teaspoon ginger
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 cup cold strong coffee
  • 1 cup chopped nuts

Instructions

  1. Simmer raisins in a little water for 4 to 5 minutes.
  2. Drain well and set aside.
  3. Mix uncooked sausage and sugars until well blended.
  4. Add eggs and mix well.
  5. Sift together flour, spices, and baking powder.
  6. Stir baking soda into cold coffee.
  7. Alternate adding flour mixture and coffee to the meat mixture, beating well after each addition.
  8. Stir in raisins and chopped nuts.
  9. Pour the batter into a greased and floured 9-inch tube pan.
  10. Bake at 350°F for 1 1/2 hours or until a toothpick inserted into the center comes out clean.
  11. Allow to cool slightly before serving warm or cold.
