Ingredients

  • 3/4 cup self-rising flour
  • 1 1/4 cups self-rising yellow cornmeal mix
  • 2 tablespoons brown sugar
  • 1/2 teaspoon garlic powder
  • 2 tablespoons melted butter
  • 1 beaten egg
  • 2 hot peppers, cut-up
  • 1/2 diced bell pepper
  • 1 diced tomato
  • 1 small can cream-style corn
  • 1 cup shredded Cheddar cheese
  • buttermilk
  • pinch of baking soda

Instructions

  1. Mix self-rising flour, self-rising cornmeal, brown sugar, garlic powder, diced bell pepper, diced tomato, cream-style corn, shredded Cheddar cheese, and hot peppers in a bowl.
  2. In a separate small bowl, beat the egg and combine with buttermilk containing baking soda.
  3. Pour the buttermilk mixture into the dry ingredients and stir until just combined.
  4. Spray a large iron skillet with cooking spray (Pam).
  5. Pour the batter into the prepared skillet.
  6. Drizzle melted butter over the top of the batter.
  7. Bake in a preheated oven at 350°F (175°C) for 15 to 20 minutes, or until the cornbread is golden brown.
