Ingredients

  • 6 flounder or sole fillets
  • 2/3 cup finely chopped celery
  • 1 medium onion, finely chopped
  • 2 tablespoons butter
  • 1 pound cooked and chopped shrimp
  • 1/2 cup crab meat
  • 1/2 cup seasoned bread crumbs
  • 1 tablespoon chopped parsley
  • 1 egg, slightly beaten

Instructions

  1. Wash fillets; drain well on paper towels.
  2. Sauté celery and onion in butter.
  3. Add cooked and chopped shrimp, crab meat, bread crumbs, chopped parsley, and slightly beaten egg; mix well.
  4. Spread the seafood mixture on each fish fillet.
  5. Roll up the fillets and place in a lightly greased baking dish.
  6. Pour white wine sauce over the filled fillets.
  7. Top with bread crumbs, Parmesan cheese, and additional chopped parsley.
  8. Refrigerate overnight if desired.
  9. Bake at 350°F for 30 minutes before serving.
