Tent Dinner

Ingredients
- 1 pkg. smoked sausage, chunked
- 1 onion, chopped
- 2 (16 oz.) cans lima beans ⓘ
- 1 lb. chicken gizzards
- 1 lb. chicken livers ⓘ
- 6 c. water ⓘ
- 1 Tbsp. salt ⓘ
- 1 Tbsp. Worcestershire sauce ⓘ
- 1 tsp. red pepper ⓘ
- 3 Tbsp. bacon drippings ⓘ
- 1 bunch green onions, chopped ⓘ
- 1 bunch celery, chopped
- 2 bell peppers, chopped ⓘ
- 1 lb. lean ground meat ⓘ
- 2 lb. hot bulk sausage ⓘ
- 2 c. rice (uncooked) ⓘ
Instructions
- Cook gizzards and livers in water with salt, Worcestershire sauce, and red pepper until tender, about 20 to 30 minutes.
- Remove gizzards and livers from broth, grind or chop them, and set aside.
- Save the broth for cooking the rice and other ingredients.
- In a large pot, heat bacon drippings and sauté chopped onions, celery, and bell peppers until tender.
- Add smoked sausage, hot bulk sausage, and lean ground meat; cook until browned.
- Stir in lima beans, chopped gizzards and livers, and seasonings.
- Add rice and pour in the saved broth, then bring to a boil.
- Reduce heat, cover, and simmer until rice is cooked and flavors meld, about 20 minutes.
