Ingredients

  • 2 medium potatoes, peeled and sliced
  • 1 large onion, thickly sliced in rings
  • Green pepper, wide strips
  • Red pepper, halved
  • 2 cloves garlic, minced
  • 1/2 head cabbage, sliced
  • Sliced zucchini (optional)
  • Halved mushrooms (optional)
  • Salt
  • Pepper
  • Parsley
  • 1 Tbsp. chili powder or other spices
  • Egg cubes
  • Imitation bacon bits

Instructions

  1. Mix egg whites and Egg Beaters together.
  2. Pour the mixture into a warm pan.
  3. Cook over low heat until the eggs are set.
  4. Allow to cool slightly.
  5. Cut into squares and serve.
