Vegetable Dinner - Cabbage Scramble

Ingredients
- 2 medium potatoes, peeled and sliced ⓘ
- 1 large onion, thickly sliced in rings ⓘ
- Green pepper, wide strips ⓘ
- Red pepper, halved ⓘ
- 2 cloves garlic, minced ⓘ
- 1/2 head cabbage, sliced ⓘ
- Sliced zucchini (optional) ⓘ
- Halved mushrooms (optional) ⓘ

- Pepper ⓘ
- Parsley ⓘ

- Egg cubes ⓘ

Instructions
- Mix egg whites and Egg Beaters together.
- Pour the mixture into a warm pan.
- Cook over low heat until the eggs are set.
- Allow to cool slightly.
- Cut into squares and serve.
