Ingredients

  • 1 cup chopped onion
  • 6 slices bacon, cut into 1/2-inch pieces
  • 3 pounds chuck roast, cubed
  • 4 medium red potatoes, halved
  • 3 carrots, cut into 1-inch pieces
  • 2 medium onions, halved
  • 8 ounces fresh mushrooms, halved
  • 1/2 cup chopped fresh parsley
  • 1/2 cup apple juice
  • 1/2 cup beef broth
  • 6 ounces tomato paste
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried thyme
  • 1 teaspoon chopped fresh garlic
  • 2 bay leaves

Instructions

  1. Preheat oven to 325°F.
  2. In a Dutch oven, combine chopped onions, bacon, and cubed chuck roast.
  3. Cook over medium-high heat, stirring occasionally, until the meats are browned, about 8 to 10 minutes.
  4. Stir in all remaining ingredients: red potatoes, carrots, onions, mushrooms, parsley, apple juice, beef broth, tomato paste, salt, pepper, thyme, garlic, and bay leaves.
  5. Cover the Dutch oven with a lid.
  6. Bake for 1 1/2 hours.
  7. Uncover and continue baking, stirring occasionally, for an additional 2 hours.
