Ingredients

  • 2 lb. flounder or other fish fillets
  • 6 slices cooked ham or turkey ham
  • 6 slices Swiss cheese
  • 1 tsp. grated orange rind
  • 1/4 tsp. white pepper
  • 1 egg
  • 1 c. bread crumbs
  • 1 Tbsp. butter or margarine
  • 1 Tbsp. flour
  • 1 c. light cream or half and half
  • 1/4 c. Parmesan cheese

Instructions

  1. Thaw the fish fillets if frozen.
  2. Place one slice of ham and one slice of Swiss cheese in the center of each fillet.
  3. Cut the ham and cheese to fit the fillet if necessary.
  4. Sprinkle the fillets with grated orange rind and white pepper.
  5. Roll each fillet into a pinwheel and secure with toothpicks.
  6. Gently dip the rolled fillets into beaten egg, then coat with bread crumbs.
  7. Place the coated fillets in a greased 12 x 8 x 2-inch baking dish.
  8. Bake until the fish is cooked through and golden brown on top.
