Ingredients

  • 8 thin slices bread, crusts removed
  • 1 cup diced green pepper
  • 1 small chopped onion
  • 1 1/2 cups lo-cal mayonnaise
  • salt and pepper to taste
  • 1 cup chopped ham
  • 1 cup diced celery
  • 4 beaten eggs
  • 2 cups milk
  • 1 (4 oz) mushrooms (optional)
  • 1/2 cup grated cheese

Instructions

  1. Place 4 slices of bread in a buttered mixing pan to form the first layer.
  2. Mix diced green pepper, chopped onion, and lo-cal mayonnaise together.
  3. Spread the mixture with chopped ham and diced celery over the bread in the pan.
  4. Add the second layer of bread on top of the ham mixture.
  5. In a separate bowl, beat eggs and milk together and pour over the layered bread and fillings.
  6. Sprinkle grated cheese evenly over the top.
  7. Bake the assembled dish for 1 hour at 350°F.
  8. This dish can be prepared the night before and frozen if desired.
  9. Serve with a green salad for a complete supper or brunch.
