Mexi Beef Casserole

Ingredients
- 1 lb. ground beef ⓘ
- 1/4 c. chopped onion ⓘ
- 1/2 c. chopped celery ⓘ
- 1 (16 oz.) can red kidney beans, drained ⓘ
- 1 (12 oz.) can whole kernel corn, drained ⓘ
- 1/2 c. shredded Cheddar cheese ⓘ
- 1 (8 oz.) can tomato sauce ⓘ
- 1 (2 1/4 oz.) can sliced ripe olives, drained ⓘ
- 1 1/2 tsp. chili powder ⓘ
- 1/2 tsp. salt ⓘ
- 1/2 tsp. pepper ⓘ
- 1/2 c. crushed corn chips ⓘ
Instructions
- Combine ground beef, chopped onion, and chopped celery in a 2 1/2-quart casserole, stirring well.
- Cover with wax paper and microwave on High for 5 to 6 minutes or until meat is no longer pink, stirring every 2 minutes.
- Drain off drippings.
- Add drained kidney beans, drained corn, tomato sauce, sliced olives, chili powder, salt, and pepper to the meat mixture, stirring well.
- Cover and microwave on High for 4 to 5 minutes or until thoroughly heated, stirring after 2 minutes.
- Sprinkle with shredded Cheddar cheese and crushed corn chips.
- Reduce to Medium-high (70% power) and microwave, uncovered, for 2 minutes until cheese melts.
