Ingredients
- 3/4 lb. beef, cubed ⓘ
- 3/4 lb. Italian sausage, skinned and cut in chunks ⓘ
- 1 stewing chicken, cut up ⓘ
- 3 1/2 qt. stock ⓘ
- 2 1/2 cups quartered, skinned tomatoes ⓘ
- 1 cup fresh lima beans ⓘ
- 1 can okra (optional) ⓘ
- 2 cups diced peppers ⓘ
- 3/4 cup diced onions ⓘ
- 1 cup diced carrots ⓘ
- 1/2 cup diced celery ⓘ
- 1 cup sliced mushrooms ⓘ
- 1 bay leaf ⓘ
- 1 tablespoon Worcestershire sauce ⓘ
- 2 cups fresh corn or Niblets ⓘ
Instructions
- Saute sausage and beef until almost done.
- Add meats to stock and bring to a boil.
- Reduce heat and simmer for 1 hour.
- Cool enough to remove bones.
- Return meat to broth.
- Bring to a boil again; add all ingredients except corn.
- Simmer for 45 minutes, stirring frequently.
- Add corn and simmer for an additional 15 minutes.
- Season to taste and serve.
