Ingredients

  • 3 Tbsp. red wine vinegar
  • 1 tsp. dried basil
  • 1 tsp. Dijon mustard
  • 1/2 tsp. oregano
  • 1/4 tsp. salt
  • 1/8 tsp. coarsely chopped green pepper
  • 1 clove garlic, minced or pressed
  • 1/2 cup olive oil or salad oil
  • 1/4 cup finely chopped cilantro (parsley)
  • 1 1/2 cups dry pasta, cooked (about 3 cups)
  • 1 small red pepper, chopped
  • 2 Tbsp. Parmesan cheese
  • 2 Tbsp. finely cubed Cheddar cheese
  • 2 or 3 finely chopped green onions
  • 1 small can sliced black olives
  • 2 average size Roma tomatoes, chopped

Instructions

  1. In a large bowl, mix the red wine vinegar, dried basil, Dijon mustard, oregano, salt, green pepper, and minced garlic.
  2. Using a whisk or fork, gradually beat in the olive oil until well combined.
  3. Add the cooked and drained pasta to the dressing mixture and toss to coat evenly.
  4. Stir in the chopped red pepper, Parmesan cheese, cubed Cheddar cheese, chopped green onions, sliced black olives, and chopped tomatoes.
  5. Serve immediately or refrigerate for an hour to let flavors meld before serving.
