Ingredients

  • 2 cups boiling water
  • 3 chicken bouillon cubes
  • 1 cup chopped potatoes
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/4 cup butter or margarine
  • 2 cups milk
  • 1/2 cup flour
  • 1/2 cup grated Cheddar cheese
  • 1/2 cup grated Monterey Jack cheese
  • 1 tablespoon parsley
  • pepper

Instructions

  1. In a large pan, combine boiling water with the chicken bouillon cubes and bring to a boil.
  2. Add chopped potatoes, carrots, celery, onion, green pepper, and butter to the pan.
  3. Reduce heat and simmer until the vegetables are tender.
  4. In a blender, combine milk and flour until smooth.
  5. Pour the milk and flour mixture into the cooked vegetables and cook for 3 minutes.
  6. Add the grated Cheddar and Monterey Jack cheeses, stirring until melted.
  7. Stir in parsley and season with pepper to taste.
  8. Serve hot.
