Ingredients

  • 1/2 cup dried cranberries
  • 1/2 cup dry sherry
  • 4 medium leeks, sliced into 1/2-inch pieces
  • 4 carrots, cut into 1/4-inch pieces
  • 8 oz mushrooms, quartered
  • 4 cups cooked turkey, shredded
  • 3/4 cup frozen peas
  • 2 teaspoons dried tarragon
  • 1/2 cup parsley, chopped
  • 2 cups chicken broth
  • 3 tablespoons unsalted butter
  • 3 tablespoons flour
  • 1 sheet frozen puff pastry
  • finely grated zest of 1 orange (optional)
  • 1 egg, lightly beaten

Instructions

  1. Soak cranberries in sherry and set aside.
  2. Bring water to a boil, add carrots, and cook until tender, about 2 minutes.
  3. Add leeks and cook for about 1 1/2 minutes, then drain.
  4. Cook mushrooms in 1 tablespoon oil for about 5 minutes.
  5. Mix together shredded turkey, drained cranberries, and all cooked vegetables.
  6. Heat broth and reserved sherry.
  7. Melt butter over medium-low heat; add flour and cook, stirring, until lightly browned, about 3 minutes.
  8. Slowly whisk in hot broth and sherry, whisking over medium-high heat until thickened, about 5 minutes.
  9. Season with salt and pepper to taste.
  10. Fold the white sauce into the vegetable and turkey mixture.
  11. Transfer the mixture to a round 2 to 3-quart casserole dish.
  12. Preheat oven and roll out puff pastry sheet to fit the casserole dish.
  13. Cover the filling with the puff pastry, trim excess, and cut a small slit in the top for steam.
  14. Brush the pastry with the beaten egg.
  15. Bake at 400°F (200°C) until golden brown, about 20-25 minutes.
