Thanksgiving Pot Pie
A hearty, flavorful turkey pot pie with cranberries, leeks, carrots, mushrooms, and herbs, perfect for a comforting Thanksgiving family dinner or special occasion.
Ingredients
- 1/2 cup dried cranberries ⓘ
- 1/2 cup dry sherry ⓘ
- 4 medium leeks, sliced into 1/2-inch pieces ⓘ
- 4 carrots, cut into 1/4-inch pieces ⓘ
- 8 oz mushrooms, quartered ⓘ
- 4 cups cooked turkey, shredded ⓘ
- 3/4 cup frozen peas ⓘ
- 2 teaspoons dried tarragon ⓘ
- 1/2 cup parsley, chopped ⓘ
- 2 cups chicken broth ⓘ
- 3 tablespoons unsalted butter ⓘ
- 3 tablespoons flour ⓘ
- 1 sheet frozen puff pastry ⓘ
- finely grated zest of 1 orange (optional)
- 1 egg, lightly beaten ⓘ
Instructions
- Soak cranberries in sherry and set aside.
- Bring water to a boil, add carrots, and cook until tender, about 2 minutes.
- Add leeks and cook for about 1 1/2 minutes, then drain.
- Cook mushrooms in 1 tablespoon oil for about 5 minutes.
- Mix together shredded turkey, drained cranberries, and all cooked vegetables.
- Heat broth and reserved sherry.
- Melt butter over medium-low heat; add flour and cook, stirring, until lightly browned, about 3 minutes.
- Slowly whisk in hot broth and sherry, whisking over medium-high heat until thickened, about 5 minutes.
- Season with salt and pepper to taste.
- Fold the white sauce into the vegetable and turkey mixture.
- Transfer the mixture to a round 2 to 3-quart casserole dish.
- Preheat oven and roll out puff pastry sheet to fit the casserole dish.
- Cover the filling with the puff pastry, trim excess, and cut a small slit in the top for steam.
- Brush the pastry with the beaten egg.
- Bake at 400°F (200°C) until golden brown, about 20-25 minutes.
