Ingredients

  • 2 lb. boneless skinless chicken breasts
  • flour
  • vegetable or olive oil
  • 1/2 c. butter
  • 1 tsp. chopped garlic
  • 1 can artichoke hearts, sliced
  • 1 can straw mushrooms
  • 1 medium red pepper
  • 1 c. white wine
  • 1/3 c. fresh lemon juice
  • 2 tsp. parsley
  • salt and pepper
  • 1 roasting chicken (3 lb. or more)
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 16 small white onions, peeled
  • 12 small red potatoes
  • 3 Tbsp. butter or margarine
  • 3 Tbsp. vegetable oil
  • 1/2 c. boiling water
  • 1 envelope instant chicken broth
  • 1 tsp. leaf basil, crumbled
  • 1 Tbsp. parsley
  • 4 to 5 red or green peppers, uncooked
  • 1 c. cooked brown rice
  • 1 c. cooked bulgur
  • 2 cloves garlic, crushed or pressed
  • 1 medium onion, finely chopped
  • 1 large carrot, coarsely shredded

Instructions

  1. Prepare the chicken by boning and skinning the breasts, then dredge in flour and set aside.
  2. Heat vegetable or olive oil in a large skillet over medium heat and brown the chicken breasts on both sides. Remove and set aside.
  3. In the same skillet, melt 1/2 cup of butter and add chopped garlic, cooking until fragrant.
  4. Add sliced artichoke hearts, canned straw mushrooms, chopped red pepper, and peeled small white onions. Cook until vegetables are tender.
  5. Pour in white wine and fresh lemon juice, stirring to deglaze the pan and combine flavors.
  6. Add chopped parsley, salt, and pepper to taste, then return chicken to the skillet. Cover and simmer until chicken is cooked through, about 20-25 minutes.
  7. In a separate roasting pan, prepare the roasted chicken by seasoning with salt and pepper, then roast at 375°F (190°C) for approximately 1 hour or until fully cooked.
  8. In the same roasting pan, add small red potatoes, peeled, and small red onions, peeled. Toss with butter or margarine, vegetable oil, boiling water, and chicken broth envelope.
  9. Sprinkle with crumbled leaf basil and additional parsley, then roast along with the chicken, basting occasionally, until vegetables are tender and chicken is browned.
  10. Cook brown rice and bulgur according to package instructions.
  11. In a small pan, sauté crushed garlic and chopped onion in a little oil until translucent, then add shredded carrot and cook briefly.
  12. Serve the chicken with the vegetable mixture, rice, and bulgur, garnished with fresh herbs.
